Recipe: Salmon and Pasta

If you want a quick and easy meal that uses freshly made or leftover salmon patties, try this out.


Ingredients:

2 salmon patties

1 pint of cherry tomatoes

½ package of fettuccine noodles

olive oil

sea salt, to taste


Directions:

  1. Cook the noodles according to the package. Drain.
  2. Cut the salmon into bite-sized pieces.
  3. Halve the tomatoes.
  4. Add 1-tablespoon olive oil to pan and heat over medium-high heat.
  5. Add tomatoes and sauté for 3 minutes.
  6. Add noodles and salmon.
  7. Drizzle with 4 tablespoons olive oil, adding more until noodles are coated lightly.
  8. Mix and heat until salmon is heated throughout.
  9. Season with sea salt, to taste.
